Chicken (Diced or pulled)
Dried apricots (or sultanas/combination of both, and more or less if you prefer) - (Chopped)
Mayonnaise, or enough to mix
Curry powder (The heat you'd prefer) - We used mild
Matthew’s Preserved Spicy Pineapple Chutney (Can be substituted with my Mango Chutney, Spicy Mango Chutney or Spicy Banana Chutney)
Combine all ingredients in a bowl and mix, add additional sultanas or apricots if you wish
This is an easy recipe that’s a great way to use up leftover chicken from your Sunday roast. Enjoy it either in your sandwiches or as an accompaniment to a jacket potato for an easy lunch/dinner, or just on its own with a salad.
