Coronation Chicken

Ingredients

Amount Ingredient
Breast/leg
Chicken (Diced or pulled)
Hand full
Dried apricots (or sultanas/combination of both, and more or less if you prefer) – (Chopped)
3 tblsp
Mayonnaise, or enough to mix
1 tsp
Curry powder (The heat you’d prefer) – We used mild
1 tblsp
Matthew’s Preserved Spicy Pineapple Chutney (Can be substituted with my Mango Chutney, Spicy Mango Chutney or Spicy Banana Chutney)

Method

Add chicken to a pan and cook throughout.

Combine all ingredients in a bowl and mix, add additional sultanas or apricots if you wish

This is an easy recipe that’s a great way to use up leftover chicken from your Sunday roast. Enjoy it either in your sandwiches or as an accompaniment to a jacket potato for an easy lunch/dinner, or just on its own with a salad.
